Recipe 1
Ingredients
Pickle Mix
- 12 Tablespoons brown sugar,
- 1 Tablespoons salt,
- 2 Tablespoons ready made mustard,
- 3 saltspoons white pepper,
- 3 teacupful brown vinegar,
Method
- 1. Boil beetroot until tender,
- 2. Remove skins and slice,
- 3. Pack the beetroot in jars, ( See Notes )
- 4. Put all the Ingredients for the pickle mix in a pan,
- 5. Bring to the boil and boil for a few minutes,( See Notes )
- 6. This mix is then pour into the jars of beetroot,
- 7. Leave to cool slightly,( See Notes )
- 8. Seal and label,( See Notes )
- 9. Store for 6 weeks to mature or until the brown mix is beetroot coloured.
Notes
- 1. Use of a gas mask when cooking the mix would help, it can make your eyes water ! :-)
- 2. Use strong jars and lids with rubber seal and soak them in boiling water just before using,
- 3. Sealing the jars when still hot forms a vacuum in the jars,
- 4. This recipe makes enough mix for about seven 1 lb jars.
