Jellied Beetroot

Recipe 1

Ingredients

  • 4 lb Beetroot,
  • 1 Pint good vinegar,
  • 1 Raspberry jelly,
  • 2 oz Sugar.

Method

  • 1. Boil the beetroot until tender,
  • 2. Skin, and chop the beetroot up into small cubes,
  • 3. Put the beetroot into jars,( See Notes )
  • 4. Put Vinegar,sugar and jelly in a pan,
  • 5. Bring to the boil,
  • 6. Pour over the beetroot in the jars,
  • 7. Leave to cool slightly, ( See Notes )
  • 8. Seal and label,( See Notes )
  • 9. Store for a few days to mature.

Notes

  • 1. Use strong jars and lids with a rubber seal and soak in boiling water just before using them,
  • 2. Sealing when still quite hot forms a vacuum in the jars.
