Ingredients

  • 2lb Joint of Reestit Mutton
  • 2lb Tatties
  • 2 medium sized carrots
  • 1 medium swede
  • 2 onions
  • 1 cabbage (preferably Shetland kale)

Method

  • Place joint of mutton in large pan with sufficient water to cover. Bring to boil and simmer for 2 - 3 hours until meat is tender.
  • Remove meat from pan, skim off fat, and dilute stock if it is too salty.
  • Dice vegetables and add to pan. Bring to boil and simmer until vegetables are tender.

To Serve

Note:

  • As many people will find Reestit Mutton Soup very salty, which is likely to induce thirst, a good supply of liquid refreshment should be available.
