Shetland Oatcakes

Recipe 1

Ingredients

  • 4 teacups of fine oatmeal
  • Quarter teacup of self raising flour
  • Pinch of salt
  • 1 teaspoon of baking soda
  • 2 teaspoons of castor sugar
  • 4 ounces Trex

Method

  • Add a small amount of boiling water. Enough to turn the mixture in to a firm dough.
  • Place in a hot oven for 8 minutes. Turn the oatcakes and put them in the oven for 4 minutes on a low heat.
  • Take them out of the oven, allow them to cool, and you have your Shetland oatcakes.


Recipe 2

Ingredients

  • 6 oz Medium Oatmeal,
  • 1 Level Teaspoon Salt,
  • 1 Level Teasppoon Baking soda,
  • 1/2 oz Butter/Margarine,
  • Approximately 2-3 fl oz Hot water.

Method

  • 1. Mix all dry ingredients in a bowl,
  • 2. Add butter/marg. and rub in,
  • 3. Add hot water and mix to a firm dough,
  • 4. Divide in two and roll out in 8 inch rounds,
  • 5. Cut into quarters and bake for 8 minutes at 375 F,
  • 6. Turn over and turn the oven to a low heat,
  • 7. Bake for 4 minutes.

Note

Great with cheese and rhubarb jam.
